At 6 weeks old, my son was diagnosed with a dairy and soy protein allergy. If you have a baby who wakes up screaming randomly during naps and at night, spits up a lot, and has bloody loose poops, you might be facing a dairy and soy protein allergy. After about 6 weeks of being dairy and soy free while breastfeeding, we finally started to see some improvement. In the beginning, it was definitely hard finding food options that I could enjoy!  This blog will hopefully help other breastfeeding mamas find foods, recipes, and restaurant options that are dairy and soy free!

Crispy Potatoes

Tonight I made crispy potatoes, sun-dried tomato chicken sausage and fresh corn.

I love making my own potatoes because I know they aren’t cooked in soybean oil. Did you know McDonald’s french fries have a dairy protein on them?!

To make this easy side dish you need:

2 Yukon potatoes washed and cut into 1/4 inch thick slices. No need to peel!

Olive oil

Salt, pepper and paprika to taste. 

How to make it:

Boil potato slices until soft, about 6 minutes. Drain water and return to pot. Add the olive oil and spices. Mix well making sure to coat both sides. Heat a skillet on the stove. Place potatoes on skillet in one layer. Cool until brown, about 3 minutes. Flip and cook the other side for 3 minutes. 

You can use different seasonings like thyme or Rosemary depending on the rest of your meal!  

 

Balsamic Chicken and Pasta

Last night I made a delish dinner of Balsamic Chicken and Pasta.

Ingredients:

2 Chicken Breasts

1/4 Cup Balsamic Vinegar

2 Tablespoons Maple Syrup (Make sure you get one without Caramel Coloring added)

2 Tablespoons of packed Brown Sugar

2 Tablespoons Orange Juice

1 Tablespoon Olive Oil

1/2 box of Your favorite Pasta

2 Medium Sized Tomatoes

1 Medium Sized Onion

1 Clove of garlic

How to make it!

Grill the chicken breasts to an internal temperature of 165 degrees.

While the chicken is cooking, make your balsamic sauce. In a small sauce pan, heat the balsamic vinegar, brown sugar, orange juice, olive oil and maple syrup. Bring to a boil then reduce to a simmer.

Cut your onions, garlic and tomatoes. In a skillet, lightly brown the onions and garlic. After they have browned, add the onions, garlic, and chopped tomatoes into your balsamic sauce. Simmer for 10 minutes.

Cook your pasta according to the label.  Strain your pasta and return to pot. Add the sauce. Slice your chicken and serve on top.
